What kind of seasoning do you use for making sausage? I’ve been contemplating making my own since I’ve been eating more of it but can’t find a recipe for seasoning that sounds appealing.

2·15 days agoArroz Mexicano (literally Mexican rice). It’s simple and quick to make but the flavor is vibrant and comforting at the same time. And if you top it with a fried egg (slightly less traditional) then it’s a full hearty meal!

1·17 days agoAnchovies are great! I usually try to explain that they’re not really fishy, just a lovely burst of salty umami greasiness. No one will share my anchovy pizza though.

2·17 days agoLengua is the freaking best, but any of my friends or coworkers who didn’t grow up eating it just look at me like I’ve lost my mind when I order it. (My partner being the exception, but he doesn’t want to eat it.)
Also I just had yellowtail cheeks for the first time this past year and oh my God. What a flavor and texture!

2·1 month agoI just watched this with my partner last week, and every so often one of us will just look at the other and go “Mom. My nuts?”
Adam Ragusea is pretty fantastic for showing the ‘why’ for sure.
I also like America’s Test Kitchen, because they do a lot of discussion about why things work and test different conditions to make recipes that are the easiest and clearest they can be. I have yet to have a recipe from their videos or cookbook fail.
